2024 Winner of "Best in Show" at the BVI Charter Yacht Society boat show! Island Standard Time is a 2021 Bali 4.8 that will accommodate 8 charter guests in 4 spacious queen cabins. She has solar panels, air conditioning, water maker, ice maker, full sized refrigerator, a fully customizable menu, Caribbean made eco friendly and reef safe toiletries, coffee/espresso machine, rendezvous scuba diving, snorkeling gear, underwater scooters, subwing, wakeboard, stand up paddleboard, towable water tube, 10 ft. floating dock, pool noodles, fishing gear, board and card games, television in the salon, Fusion 3 Bluetooth enabled sound system.

Meet our Crew
CAPTAIN
Solomon Josiah Wood
Solomon first learned to sail in the rugged waters of Scotland, where the mix of wild seas and sweeping coastlines sparked a passion for sailing that has only grown stronger over the years. What began as a pastime soon developed into a lifelong passion for the sea. For the past four summers, Solomon has been based in Croatia, working in private charters and guiding guests through some of the most beautiful sailing waters in the Mediterranean. With a focus on creating unforgettable experiences, Solomon takes pride in ensuring every guest has the best week of their lives onboard.
Holding an RYA Yachtmaster Offshore qualification with both STCW and Commercial Endorsement, Solomon brings both professionalism and passion to every charter. Beyond the technical skills, what sets Solomon apart is a deep love for introducing people to sailing and sharing the joy of life at sea. Whether it’s navigating turquoise bays, teaching guests how to sail, or simply creating moments of calm on deck, Solomon embodies both adventure and hospitality.

CHEF
Cian Browne
Cian trained at Ballymaloe Cookery School in Ireland, graduating with first-class honours. The farm-to-fork ethos there gave him a deep respect for ingredients, seasonality, and the power of simple food cooked with care. During his time, he also worked service at Ballymaloe House, plating five-course dinners for over 80 covers a night—an experience that sharpened both his technical skills and his ability to thrive under pressure.
He went on to do stages at Margaret’s and Quay in Sydney, both 2- and 3-hatted restaurants, where he gained invaluable insight into fine dining kitchens at the highest level.
Since then, Cian has cooked across a wide range of kitchens and settings. He has worked as a private chef, designing bespoke menus and catering events, and more recently spent a winter season in the French Alps, running chalets and preparing multi-course meals for new groups of guests each week. That role taught him how to adapt quickly, balance precision with warmth, and bring a restaurant-level standard to a homely setting.
Most recently, he joined The Yacht Week, cooking on board for groups of 8–10 guests in Croatia. Life at sea demanded flexibility, creativity, and the ability to design menus that suited diverse tastes and dietary needs—all in the tightest of kitchens. It was as much about creating an experience as it was about the food, which is exactly what he loves about this career.
Alongside his chef work, Cian also works as a freelance MC and event manager, a role that has honed his skills in performance, organization, and creating energy and connection for groups—qualities that naturally flow into his cooking and hospitality.
Originally from Ireland, he has lived and cooked in Australia, England, France, and back home again. His journey has always been about chasing great food and even better craic, and for him, cooking is about more than flavour—it’s about people, memories, and shared experiences.

The trip was absolutely outstanding. The boat and crew were truly top-notch, and I would highly recommend them to anyone. If you’re ever looking for two people to sail with, these are definitely the guys.
They were incredibly accommodating, and the food was unbelievably good. Each meal somehow topped the previous one — every single one was outstanding. It honestly exceeded all expectations. I can send photos if you’d like.

Captain Sol & Chef Cian far exceeded all expectations! Their willingness to take us to the most special waters off the beaten path truly made for everlasting memories. They are so kind and professional.
Cian's meeals can be considered works of art. It is said 'first we feast with our eyes', and we did, every day, all day!! The BVI waters are so inviting, every stop was another opportunity to swim, play, relax.
We were so surprised to just how large 'Island Standard Time' lived. Seven of us + the crew and we never felt cramped. A perfect boat for us. True luxury. Till we meet again (and we will), thank you, thank you, THANK YOU!

We are grateful for this incredible week spent with Caydon and Tash! They took us back to some of our favorite places while introducing us to new ones. We loved the itinerary and every day was a great adventure.
Every meal Tash prepared was a culinary masterpiece! She even made fresh bread throughout the week and catered to our preferences. One of our favorites was a breakfast of freshly made bagels with lox - delicious! One of our shared favorite memories was when we had an opportunity to play pickleball at Peter Island Resort followed up with a beautiful hike. Tash had snacks and drinks ready for us when we got back which was the perfect welcoming for us. As we sit here on our last day in the BVI, we look back on fantastic memories made alongside two new friends. Many thanks to Caydon and Tash!!

Caydon & Tash – It is hard to articulate what an amazing week this was! I’m sure it’s hard to have a “bad” week in the BVI’s but I’m also certain you two are the reason we enjoyed ourselves so much! With Caydon in charge, we were able to relax & not worry about safety or being able to see the best of the islands. The one-liners kept us laughing! Perfect mix of interaction & privacy! The food… oh my! Tash’s meals made us regret that we did half board! She is so talented, and we can’t wait to buy her cookbook! Hope we didn’t stress you guys out too much! We are so grateful to you both for your amazing kindness, expertise and patience in helping us have the trip of a lifetime for Daniela's 50th birthday. You are two very skilled professionals who kept us safe, entertained and well fed!! Every meal was delicious with the service and ambiance of an award winning restaurant. We all had our favorite meals and I think the poke bowl won first place. Tasha, you must write a cook book for sailing and landlubbers too. Caydon, you are a fantastic captain and your bartending is superb. You both make those around you feel so much joy while enjoying the beautiful surroundings.
